Whole wheat pasta in pepper and mushroom sauce
Yesterday was a especially tiring day. My husband and I had a lot of housework to do in our new home so I thought it was time for some pasta to get some energy. I came up with this meal:
Ingredients:
2 red sweet peppers
50 grams cheese (I used low fat fresh cheese)
1/4 cup skim milk
2 dried mushrooms (porcini or similar)
200 gr whole wheat pasta
50 gr mushrooms
salt, pepper, paprika
Put the dried mushrooms in 1/2 cup of hot water, set aside. Roast the peppers directly over the stove until the skin is completely black and comes out easily. Remove the skin (you can do it with water, in the sink). Remove the seeds and chop the peppers (not too small, they will be processed). In a blender process the peppers with the dried mushrooms and the water you soaked them into, the cheese and milk. Put the sauce in a pan, season with salt, pepper and paprika and add the mushrooms, set aside. Cook the pasta. When it's done heat the sauce and add the pasta. Serve with a salad and some good source of protein (in our case, trout) and enjoy.
