Default Avacados

I have developed a love for avacodos. What things other than the eggs I listed and burgers can I use them on or in. The simpler the better.

Fill them with tuna or chilled shrimp.

Or this...

Avocado Fruit Relish

Use this relish to top grilled fish, shellfish, or pork chops*.

1 avocado, cubed
1/2 cup diced mango or something tropical
2 green onions, chopped
1 serrano chili, seeded and chopped
1/4 cup chopped cilantro
Juice of one lime
salt to taste

Mix it all together and let is sit at room temp for 30 minutes to an hour, stirring occasionally.


* fish, shellfish and pork not included.

My favorite is avocado-tomato salad. It's best in late summer when you can get good tomatoes at the farmers' market.

Mix equal parts roughly chopped tomatoes and avocado, about half as much thinly sliced red onion. Season with salt and pepper and dress with olive oil and vinegar.

Yeah I make Guac all the time. Thanks. At a bar tonight they actually had a Mango and avacado salad. That was good.

guac or even just mashed or sliced avocado is great as a spread on sandwiches like turkey or roast beef or BLT or with any grilled meat. I just had guac tonight with my bunless turkey burger.

sliced/diced avocado in tossed salad is also good.

You can used it instead of mayonaise in any sandwich (chicken, tuna, ham, etc.).

Here in Latin America we use avocado in a lot of dishes, but not all of them are healthy. One of the healthy ones is tuna tartar: chopped tuna fillet + chopped onion + chopped tomato, seasoned with salt, pepper, lemon (the sour kind) and mixed with chopped avocado. You can add herbs to taste.

I just toss them in all of my salads, especially grilled chicken salad.
They are great mixed with crab meat and lime.

Chop some mango or peach and mix it with avocado and use that as a salsa on salmon. Heaven.
