simple fluffy pancake
How did my pancakes turn out so fluffy this morning? I need to share this before I forget
1 whole egg
1 1/2 tablespoons protein powder (egg+milk in my case)
1/2 very finely grated apple (almost pureed)
1 tbsp fine oatmeal
dash of cinnamon
I scrambled the egg first, then added the other ingredients and mixed it all ; cooked it in a pan with a pat of butter on medium heat. Clearly my best texture pancakes this year.

you cooked the egg first then added the other stuff?
sounds yummy. I've been making egg white pancakes with almond meal and nutmeg and cinn and they were fun. thought about adding some applesauce, but haven't yet. Now maybe this morning will be the time

No I just mixed it with the spoon before I added the other ingredients

gotcha.
I ended up having my normal omlette this morning but I beat the egg whites :p it's better the original way.
Will try this sooon

Pumpkin is also nice to make a little denser pancake also, Galya, have you tried that? Mmmmmm I love pumpkin 
(As everyone will no doubt notice at the summit when they get a load of my ORANGE palms  )

No, I don't keep pumpkin around except for holidays that require it. I might break some out of the freezer

anyone here make extra pancakes, and then freeze them for another day? I'd bet that would work pretty well.

I do for my daughter but they're your standard flour/milk/egg mix that I used when I was cooking for a resort. Cook, put in a rack to cool, then freeze into groups of 2. If she wants them she takes a pack out, unwraps, puts in the toaster oven for 10 min or so.

hmmm, I'll have to try this myself. I'm always looking for a quick, healthy breakfast. Maybe I'll whip up a batch tonight at halftime.
