Default "A few of my favorite things" salad

This never fails to impress the senses, and request from friends for the recipe. Totally simple, easy, and never any leftovers.

Dice 1/3 inch cubes two large tomatoes
use a spoon to make small bites of two avacadoes
6-10 ounces of cubed feta cheese
1/3 cup of pine nuts
1/4 cup of capers

The first three ingredients are the essential, after that you need something with a little crunch and flavor: celery, walnuts, onion, broccoli.

Dress with extra virgin olive oil and lime or lemon juice; lightly salt

1/2 cup Kalamata olives, halved or in thirds

1/4 cup of capers

The first four ingredients are the essential, after that you need something with a little crunch and flavor: celery, walnuts, onion, broccoli. Capers and pine nuts are my favorite

Dress with extra virgin olive oil and lime or lemon juice; lightly salt
Serves 6 for a light supper

That looks really good! I usually make a salad with tomato, avocado and red onion, with oil and vinegar.

Unfortunately, we're at the time of year when there aren't any good tomatoes around... I'll have to remember this one next summer!
