"lazy" figs
Grab two figs, possibly large and firm.
Split them in halves.
Scoop 1/2 of the insides, mash with a fork. Mix the insides with two tbps cream cheese and dash of Stevia and vanilla. Fill the figs with the mixture and serve chilled. It's the type of thing that people are impressed with and yet it takes a second to make.

I am sure you could add dried fruit, nuts and berries to the mixture but I love the plain version.

Sounds good.
I like figs, but most Americans only know them from the Newton.

I like dates. I don't think I have ever actually had a fig though. I will have to give them a shot without Newton.

Cut them in half, skewer them and wrap them with pancetta then grill them.
Serve them with mesclun, sherry vinaigrette (1 part sherry vinegar, 3 parts olive oil, salt and pepper) and then top with goat cheese and toasted hazelnuts.
You could skip the pancetta, but it's just not the same.

Is Big River your place? Or, are you the lunch Chef? Looks like a great place. Now I'm hungry!

I have a fig tree, but the figs it produces are too small for stuffing! I'm hoping I'll finally get a decent crop next year. Good for a shot of carbs before a run!

Just cut them up and toss them on salads
You can also do what they call Sultan's Viagra over here, you can stuff a fig with walnuts You basically just cut the end and put 1/4 of a walnut inside.
The dried version has sugar syrup on top so it's a no-no for me
I loved the goat cheese idea. I was thinking maybe stuffing them with ricotta and thinly sliced almonds with a bit of saffron and Stevia.
What do you say?

I am the Sous Chef (or assistant chef). The lunch menu is mine. We are doing some cool stuff. Some day hope to have my own place.

Give it a whirl. You'll never know till you try.
Figs are pretty sweet though, so I don't think that you will need the Stevia.
