Default Turkey Sausage

-8 oz ground turkey (I've used anywhere between 93 and 99% lean with good results)
-1 tsp liquid smoke
-1/2 tsp ground ginger
-1/2 tsp dried thyme
-1/2 - 1 tsp ground pepper. I use McCormick's Seasoned Pepper + ground cayenne pepper for heat
-pinch of salt

*Mix it thoroughly with your hands and form into patties.
*Sear the outsides in a frying pan/Foreman grill, and cook until done throughout the middle
*Use extra spices if you'd like, but I'd start with the listed measurements and move up from there.

It's delicious. Let me know if you do try it. As I mentioned before, go nuts with the spices if you're feeling bold. Sausage can't have too much flavor IMO.

Default dinner tonight

Hi Milkman - It was great, I only made two changes. No ground turkey in the freezer so used some boneless chicken breasts I had in freezer, and the food processor. I was curious how the texture would be, and it was good. Then I inadvertently looked at a recipe from Lisa and it said cummin. Scraped as much off as I could. This will be a regular, sans cummin.

I seldom buy ground meat, I am always suspicious of how they do it. And boneless chicken breasts go on sale often enough that I almost always have some on hand. Ate it with the last of the green beans from out of the garden, and blackberry crisp from our woods. Both of those leftovers from company dinner yesterday. Thanks - we all liked it. Rob
