Default Chimichurri sauce

Does anyone else use this stuff on various kinds of grilled meats? Beef, chicken, pork, etc.

Take fresh cilantro and garlic and finely mince them. Put the mixture in a bowl and slowly mix in EV olive oil until it's like a saucy consistency. Then add in salt, pepper and crushed red pepper to taste. Finish with a squeeze of lemon or lime juice.

I seem to be putting this on everything lately.

Oh, yes! Great stuff. I make a couple of versions and use it a lot.

I love it on grilled steak or chicken.

Marinate some flank or skirt steak, some chicken breasts, grill some veggies (corn, peppers, tomatoes, onions, summer squash, etc.). Pile it all on a huge platter and serve the chimichurri (and a lot of it) on the side.

Diluted with more oil and vinegar for a salad dressing, too.

I use it on grilled steaks and fish. If you have fresh chilis try using them instead of the dried. I also like fresh lemon thyme added in as well.

I have a couple of friends from S. America. They say each place has their own signature recipe, on the tables at all times. Each region and/or country has different takes on the chimichurri, too.
