Default Stuffed Chicken Breasts

Take some chicken breasts, slice them down the middle, but not all the way through, so they are ready to take some stuffing.

The stuffing:

Steam a bunch of spinach, add in chopped sun dried tomatoes, maybe some grated pamesan cheese, some crushed red pepper, minced garlic and salt.

Stuff the chicken breasts, close them up and wrap the stuffed breasts in a slice of prociutto.

Season with some oregano, salt and pepper.

Bake at 450 for 30 min. Serve with steamed asparagus, carrots, broccolli or whatever. Yum.

You can also substitute the parm cheese with feta, for a bigger kick. Trader Joe's organic goat's milk feta is awesome.
