Default The Oats

So oatmeal.

We bandy about how to eat it.

Low calorie flavored syrup
Whey
Splenda
Fruit
Low calorie jam
PB

Yes all very tasty. Also all sweet.

I think in my time in the boards I have only ever seen one non sweet recipe idea, which was to toast the oats and fry an egg on top.

So enter my expriment.

I first cooked my oats with water. I like em pretty thick. I used 1/2 cup of oats. Once cooked I added aprox 1/2 cup egg whites and mixed it all together and put it back in the nukerwave. I cooked for another minute or so. I then took a slice of NF cheese and melted that on top and mixed it all in.

Over all it was a pretty tasty concotion. It tasted like something, but I couldn't put my finger on it exactly.

Things to try?

I want to try putting the eggwhites with the oats without water and cooking them to see what I get. Also varrying the amount of eggs and oats in the recipe.

Sounds cool.
One thing I used to do when I ate oats was to make tuna/egg white/oat pancakes (burgers). I mixed the ingredients to form a thick mixture and cooked in a pan. It tasted unbelievable.

What's wrong with just eating oatmeal? I toast mine, add a little bit of salt and then just heat some up and eat it every morning.

A fried egg on top is good, but so is just plain oats. Try toasted oatmeal plain, you'll forget all about "additives".

My recipe:
In a deep skillet or heavy pot melt 2 tbsp butter over med-high heat.
Add one cup steel cut oats, quickly toss to coat all of the kernels with butter.
Heat over med-high until kernels start to crackle and pop, and start to get a dark coffee-colored brown.
Add 4 cups of BOILING water (steam burns hurt like hell, use a mitt) and stir.
Reduce heat to medium and simmer for 35 min.
Add 1 tsp salt and stir in, then continue to simmer 5 more minutes. Turn off heat and allow to cool. (Note that I'm at 6,000 feet, so your cooking time is probably significantly less. I'd go with 25-30 min for the initial cooking time.

I eat about 1/5 of this every day at work. If I skip a day I take the leftover home and fry it with a couple eggs and some homemade jalapeno jelly on top on Saturday.

Some days I eat it with just water and no additives, but that's a pretty basic recipe and no fun

Similar to what Mark said, you can make steel cut oats risotto-style -- toast the oats in butter or olive oil for a few minutes (I usually go 2 minutes or so, I don't toast them until they're dark as Mark said), then add boiling chicken stock instead of water, and simmer for about 20-30 minutes. You can season it with some fresh herbs, salt and pepper. I'm not fond of them, but you could add sauteed mushrooms if you like them.

You can take it one step further and add chicken chunks. I forgot the name, but a common medieval dish was basically grain gruel plus meat scraps.
