Default mish-mash

Presenting the mish-mash, something that I grew up with that I can eat all the time at any meal and never get bored with.
You need:
2 peppers (fresh or baked and peeled),sliced thin
2 peeled tomatoes, cubed
1 onion
2-3 eggs
3oz feta cheese or other cheese
1tbsp olive oil

Simmer all vegetables in the olive oil until soft (10 minutes is enough). Add eggs and cheese, stir very well and let it simmer for 15 more minutes.

Tomatoes will be coming into season soon. I'll have to try this.

One question: why cook the eggs and cheese for 15 minutes? That seems really long to me. I'd probably just cook the veggies till soft, and add the egg and cheese and cook just until set, which I'd expect to be just a couple minutes -- sort of like an Italian frittata.

Is there a Bulgarian name for this? I bet it sounds more colorful and exotic than "mish-mash."

The Bulgarian name for this is "mish-mash" (spelled миш-маш). I have no idea how it got into the language,but it sounds exactly the same. You cook it long because that gives it a distinct texture and taste very different from fritattas. If you're using baked peppers, you get the best results. It's supposed to be thick and hold together very well.

Sounds tasty, but I don't think you need to cook it that long.

In the health and fitness game, you need to try to get the most nutritional "bang for you buck" especially when dieting. Over cooking foods such as eggs, fruits and veggies destroys nutrients.

A quick saute, then add your eggs, cheese, then a nice soft scramble. Some fresh basil, chives, Italian parsely or cilantro would be nice with this.
