Default zucchini stew

I've been trying to eat more and more veggies recently.
I find stews convenient to make in large quantities and carry to work.

Here is a very simple zucchini stew:
You need:
2-3 spring green onions (chopped)
4 medium sized zucchini (cubed)
1 carrot (grated)
2 tomatoes (cubed)
dill weed or mint for a spice (chopped)
salt
2 tbsp olive oil

In a pot, simmer the onions in the olive oil. Add a 1/2 cup of water. Add the other vegetables, 1 and 1/2 cups of water and the herbs and cover the pot. Let it cook slowly for 30 minutes.
It's a great side for cottage cheese or in my case, dry curd.

Sounds good to me. Except for the dill and mint. You had to pick the two herbs I don't like...

I love this kinda stew and I'm always needing good side dishes to make in advance. Any ideas for a different herb that would go well?

The only herbs I use. Not to nitpick but it's herbes not herbs, it must be used with the french pronunciation.

Herb's my neighbour. Since he's not Canadian, I'll call him "neighbor," though.

I've got some herbes de provence AND all that other stuff. I'll give it a shot!
