Default "almost Nutri-Grain bars"

Almost Nutri-Grain Bars from "Miserly Meals" by Jonni McCoy

Makes 15 bars

Nutritional Analysis per serving:
Calories 176
Fat 5 grams
Cholesterol 12 mg
Carbs 32
Fiber 1 gram
Protein 3grams
Sodium 127mg



1 cup rolled oats (1 1/4 is better)
1 cup whole wheat flour
2/3 cup of brown sugar (1/2 works fine)
1/2 tsp salt
1/4 cup oil (canola was fine)
1 egg
1 tsp vanilla
1/4 cup apple juice
10 oz of jam
1 T. water. (not needed)


Combine oats, flour, brown sugar, baking soda, and salt. Add oil, egg, vanilla and juice and mix. Press 2/3 of mix evenly into a greased 8x12 pan (smaller is better). Mix jam with water and spread evenly over the mix. Crumble the remaining oat mix over the top and bake at 325 for 30-40 minutes or until golden brown. Cool completely before cutting.

My editorial comments are added. I made this twice. The first time with grape jam that we had at home (8oz) and the second time with the changes above and 10oz of Polaner All-Fruit (strawberry). Great in my opinion. Like all recipes, it makes 15 bars for small kindergarteners but for real people it will give you 9-12. The 9x9 pan worked best for me.

Just remember that if you make a serving of 9 instead of 15 that it will seriously effect the nutritional information provided

Carbs would jump to 53g for instance.
