Default Aussie Bites available at Sam's Club

Hey all,

After going to the summit and eating all the goodies that Cappy made. I have been on a mad dash for healthy finger foods. My mom had these treats called Aussie Bites from Sam's Club. They are made with really good ingredients. Awesome to pack in your lunchbox for a little treat at work.

I also found a recipe online for a homemade version. I bet one of you could tweek it a little to work in more protein.

Aussie Bites

Ingredients:
2 cups Regular or Toasted Oats
2 cups Whole Wheat Flour

2/3 cup Brown sugar

1 3½oz can of coconut (unsweetened)

½ cup sunflower kernels

1 cup dried fruit (raisins, dates, figs, cranberries, etc)

¼ cup honey

2 sticks unsalted butter

1 teaspoon baking soda

2 tablespoon hot water


Method:

1. Preheat oven to 350 degrees.

2. Mix first six ingredients in a bowl.

3. Melt honey and butter together in microwave.

4. Mix baking soda with hot water and add to butter mixture.

5. Pour butter mixture into dry ingredients and mix well.

6. Place tablespoons of mixture into non-stick mini-muffin cupcake pans (greasing pans not required) and flatten mixture slightly. Bake 10 minutes at 350 degrees or until golden. Cool on wire racks. Makes around 30 biscuits.

I'll try that homemade version. What do you think if you substituted some canola oil for butter?

Looks good. Thanks.

When they say "biscuts" are we talking like crisp round things or more like a soft cookie?

I made "Almost Nutrigrain Bars" yesterday and I'll share that soon. I'd like to tweak the recipe and try it again before posting.

The ones from Sam's Club are like mini muffins. They seemed to be a pretty dense like scones, but not crispy. As far as substitution, I do not claim to be a cook. But you probably could use canola oil. I just don't know what it would do to the texture.

Scott,

I made the Aussie Bites with one stick of butter and a half cup of canola oil. A lot like granola in a little cup-shape. I used chopped up dried appricots. Good with flavored yogurt.

Not very portable. Crumbles easily. So it wouldn't really work to take places. Possible if you made them in muffin liners you could tape them to transport them somewhere (trip/picnic/hike).
