I think just about any recipe would work if you just swap one fruit for another. I know I made a peach cobbler from an apple cobbler recipe some years ago. Bananas and oatmeal work really well together.
Hmmm... this wouldn't really be a healthy recipe, but you could take individual pans, put a crushed almond or walnut crust in the bottom, fill with Bananas Foster
Link to recipe , then top with granola. You'd have to cut the bananas fairly small, but I think it will work.
