eggplant lasagna
I made this today for my lunches this week. Must say it turned out pretty good!
Uses eggplant and zucchini instead of noodles. However, I made it before using 1/2 ww lasagna noodles 1/2 zucchini. Do whatever suits your fancy
1lb ground italian turkey sausage (I use Diestel 2oz 2.5g F/12 p--not all turkey sausage is created equally, some is just as fatty as pork)
6 oz part skim mozz (use more if you like it really cheesy and don't care about the extra fat)
1 1/2 eggplant cut lengthwise about 1/8-1/4 inch thick
1 jar spaghetti sauce (use your favorite or make your own..I used a jar this time)
1 zucchini or yellow squash, cut lengthwise
1 bag frozen spinach (cooked and drained)
3/4 container part skim ricotta (1 cup?)
mushrooms
bell pepper
onion
brown turkey with onions, bell pepper, mushrooms, then add sauce. Mix ricotta with spinach in a separate bowl. Start layering with meat sauce on bottom, then eggplant/zuchini, spinach, cheese and repeat until you're left with just an open layer on top.
bake at 350 for about 45mins or until it's bubbly, cheese is brown, and veggies seem cooked.
macros from my exact recipe were 8 servings: 13carb, 25Pro, 12 fat, 263 cals

OK. So it tastes good. I used cottage cheese instead of ricotta cause light ricotta is near impossible to find here.
I also skipped the spinach cause I thought I had some and didn't. But I bought spinach classico pasta sauce.
Question: When you make it, how solid is it? Mine turned out pretty runny.

Glad it was tasty for you.
The runniness depends on your sauce...you could let some of the water simmer out before you cook it. I did that cause I noticed the sauce was a bit runny. Also, try blending your cottage cheese up and it will be creamy like ricotta. The veggies have a lot of water in them too. Some people will sprinkle them with salt first and let them sweat, then squeeze out the water. Or you could lightly cook them first. [img]/images/graemlins/smile.gif[/img]

It's pretty solid once it's been in the fridge over night, but goes liquidy again when you warm it up. Fortunately this does not effect it's flavor!

Sounds very good! [img]/images/graemlins/laugh.gif[/img] I really like eggplant, but no one else in my household does. Hey, that would mean all of this would be MINE!! I'm going to try to grow eggplants in my vegetable garden this year. Last year's crop got attacked by flea beetles.

Oh dear! This was QUITE tasty! It will definitely be added into our rotation of supper choices! The eggplant adds such a distinct and positive flavor!
Also, could find the sausage, so I used the ultra lean ground turkey and put italian seasoning on it while it was cooking. And an orange pepper.

There are two ways to dry egg plant, one is after slicing to salt it and put it in a colander, per Cappiccino. But more fun, and better tasting in my opinion, grill it. Rob
