Default olive and dried tomato meat loaf

I am lazy when I cook, so here is a new concoction.

1 lb ground lean beef
2 tbsp ground or chopped up black olives
5 chopped dried tomato halves
2 eggs
pepper
oregano
a dash of cinnamon
salt

Mix and bake for 40 minutes.
It's yummy

Meat loaf. yes maybe that is what I will make for dinner....

Hmm I don't have a loaf pan. Maybe meat muffins?

Meat muffis are cute as hell. When I don't have a loaf pan, I just shape the meat in the middle of a bigger pan, no big deal.

IMO, meatloaf is better without a loaf pan. More surface area is exposed for the "crust."

Looks good Galya. Have to try this one.

I take it out, cut it into pieces and then put it back again so each individual piece can have a "full-body" crust. I am making those into meat-bars I take to work with me.
I am making a variation with pickles, pickled carrots and green beans now. I hope it comes out well. I will be trying to mix it with spinach tomorrow. Beef week for me, I get like that.

They turned out absolutely gross.
I turned to veggie soup. I blend veggies and then drink them.
Anything for better body composition.

zucchini bread and carrot cake could be the basis for a veggie bar. Mixed grated zucchine and/or carrots with some protein powder and bake. I'm sure it'll take more than that, but you get the jist.

I'll have to check out some recipes and see what can whip up. Not until monday, though. No food till then!

This meatloaf recipe sounds really good, Galya. I love dried tomatoes. I really need to get smart this Summer and dry some from the veggie garden. Last year, so many went to waste, even though I was eating tons of them every day.

I'm obviously hungry if I am surfing through the recipe forum!!

It is yummy Dave. Made it last week. The cinnamon adds a relaly nice touch..makes it taste a bit exotic.

Chicken and vegetable stir-fry... Dumped in a bunch of salt-free Thai seasoning and a little coconut milk. Actually came out very good!
