Ok, here goes. Sorry, it's slow going. Walking hurts now, throw in ice and it's not much better.
Texas Caviar:
2 cans black eyed peas, drained
1 can white acre peas, drained
2 medium tomatoes, chopped
1 medium bell pepper, chopped fine
1 medium red onion, chopped fine
1/2 cup chopped pickled jalepeno pepper
1/2 cup fresh parsley, chopped
16oz italian dressing
mix all in a large bowel, soak overnight, then drain.

velvetta and rotel (aka "heart attack in a bowl")
1 large block of Velveeta cheese
2 cans original Rotel diced tomatoes
Cut the cheese into 1 inch cubes. Place cheese in crock pot and melt on medium heat. When cheese is almost melted, add undrained rotel tomatoes.
*you can put sausage in here if you want, just brown it, let it drain, mix in.

I've never heard of white acre peas, either.
black eyed peas are also called "cow peas." Does that help?
My favorite way to eat black eyed peas is in "Hoppin' John." Of course, I'll be making up a pot for the New Year, as it's good luck to eat your black eyed peas to start the new year off right, right?
I'm not sure if white acre peas are local or not, some of the smaller markets have 'em here in cans. Google for pictures, they're small and sorta white/yellowy. Black Eyed peas aren't as common around here but most markets have them in cans. You can buy all of these DRY, but canned are much easier. Don't forget that I live in Western North Carolina, we have all sorts of weird crap here, like creasy greens (which to me are like eating lawn).
The velvetta is a party hit. You're not going to dip one chip in there and walk away, trust me. I made it for work last year, someone said "cheese and tomatoes? seems healthy to me". Yeah, they don't call it heart attack in a bowl for nothing.
