1 1/4 cups of nut meal
2 eggs
3/4 cups of applesauce
1/2 milk
3 scoops chocolate protein powder
1 teaspoon baking soda
1/2 cup spenda
1/2 teaspoon salt
1 1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 cups of shredded zucchini
1/2 cup coccoa powder

mix it all up (it'll be runny), dump it in a greased long sheetpan or cakepan (you only want about an inch of mixture deep). bake at 350 for 45min-1hr, untill set all the way thru. Flip and cool on a wire rack.

makes a tasty breakfast "bread"

Sounds good to me. These guys just don't know what goes into things like carrot cake, zucchini bread, and banana nut bread...

I thought it sounded good, too. I was planning to make it and see how it turns out. However, if you read the ingredient list, you can see how it comes across as odd... zucchini plus chocolate plus apple sauce.... it's just an alternative (and much more nutrient dense) recipe.

Hey, Gob -- what size pan do you use? A 13x9 inch cake pan, or a jelly roll sheet pan? Or would either one be okay?
