If you substitute applesauce for oil, is it a 1:1 ratio or something different? In brownies for example.

I think a 1:1 ratio works pretty good.

A 1:1 ratio will work, but it'll change the texture quite a bit. Usually I've had better results with leaving in part of the oil and substituting applesauce for the remainder (e.g. if the recipe calls for 3/4 cup oil, use 1/4 cup oil and 1/2 cup applesauce.)

Oh, yeah -- I forgot to mention that subbing applesauce for oil can shorten the baking time, too. Baked goods without oil will burn very quickly (which I learned the hard way!)

I like 1 1/4:1 applesauce to oil...helps things stay a little more moist.

on the cooks illustrated board i read 'draining' the applesauce gives better results as well, which can be done with a tea towel or cheese cloth
