I get limited by what ODB won't eat (like squash) but here's one. Yum, curry.
Can be served over rice or by itself.
Start boiling water for rice the minute you get home, and you'll have supper in less than half an hour. INGREDIENTS:
1 tbsp. oil
1 clove garlic, minced
1 tsp. cumin
1/2 tsp. turmeric
1 tsp. ginger
1 tsp. salt
1 head cauliflower florets
One 10 oz. package frozen peas
1 zucchini or summer squash, diced
One 14 oz. can chickpeas, drained
1. In a saucepan, heat the oil and stir the garlic, cumin, turmeric, ginger and salt over low heat for 2 minutes. Add the cauliflower, peas, squash and drained chickpeas with 1/2 cup of water. Stir, cover, and simmer until the vegetables are tender, about 15 minutes. Makes 4 servings.

That curry sounds really good, except I would eat that entire recipe myself!  In fact, I'm going to try that -- except I need to buy some turmeric.
I eat stir-fried vegetables all the time with a Thai twist that's pretty easy. I just use frozen stir-fry veggie mixes. Wal-Mart has some really good ones that are only about $1 per bag. I stir fry them with some salt, ginger, and chili powder, and add some lime juice in toward the end. This Summer, I grew Thai basil in my vegetable garden and throw that liberally into the mix when I have it. I eat it either just with veggies or stir-fry chicken or another meat before adding in the veggies and spices. Lately, I have just been cooking the veggies alone, since my in-laws (Hurricane Katrina refugees) have been handling most of the dinner cooking. They usually provide the protein, and I supplement with veggies, since I eat more of them than everyone else in the house combined.

My favorite stanby...sautee onion and garlic in EVOO until translucent. Put in a can of tomatoes, and simmer. Throw in spices (I like cilantro or basil). Slice a yellow and a green zucchini, and throw them in. Heat and eat. I like my zucchini snappy, so I just throw it in for a couple of seconds or so.

If you like to grill...try this,
chunck any sweet peepers, zucchini, squash, eggplant, sweet onions and toss in EVOO with spices and herbs and grill untill tender. The leftovers make great omlete stuffing.

Peeper:
1) a.k.a. "Spring Peeper", or Pseudacris Crucifer, it is a small chorus frog know for its single clear note, or "peep". Sample pic below:
2) a.k.a. "Peeping Tom", or voyeuristic opportunist. Sample pic below; this lady was caught trying to get a glimpse of RedLefty. Tsk, tsk... she soon learned that only RedWifey gets to peep at the Lefty.
Note: Unfortunately neither of these is a vegetable, which would not make them useful for your recipes.
