If you just substituted Neufchatel for full fat cream cheese and substituted Splenda for sugar, would this be preety healthy or at least low carb for a cheesecake?

Neufchatel is still pretty rich. It has about 2/3 as much fat as cream cheese. It still has all the dairy carbs in it so even with the splenda it's not too far removed from ordinary cheesecake, in my opinion.

I think a better option might be a ricotta cheesecake made with Splenda, or perhaps TG's now famous "I can't believe it's not cheesecake" link

Thanks Racer-- I guess because I have been following Adam's Diet I have not been too concerned with fat content of food but rather more concerned with carbs...thought maybe the Neufchatel would be a good compromise - same taste with slightly fewer calories....thanks for the ricotta cheesecake recipe...I will try it [img]smile.gif[/img]

I've made cheesecakes for years, and I always use Neufchatel. It tastes just as good, but it's still pretty rich.

I made one last year with Neufchatel and cottage cheese, blended real, real good. Splenda, of course. My kids ate it just fine...
