Hey everyone:

I recently (Thursday) went apple picking with the kids at work. Anyway I came home with a HUGE bag of apples. Unforunately I live alone and won't be able to eat all of these myself. I'm trying to get some ideas for good snacks that I can maybe make into an apple crisp/apple pie that would be healthy that I could eat.

Let me know of your ideas.

Google for an apple pie recipe and substitute Splenda for sugar to make the filling. You could probably nuke the filling to cook it and then pour into a healthier no-bake pie crust like the one Johnka uses in his cheesecake recipe. Alternatively, you could probably make a reasonably healthy pie crust with whole wheat flour and a trans-fat free margarine substitute like Smart Balance.

Or you could mail the bag to me - my younger daughter and I can wipe out a bunch of apples in no time.

Actually, apples keep for a fairly long time - you may be able to use them up before they go bad without much of a problem.

I just found an Apple Pie in Gourmet Nutrition, I think I'll try to make it tomorrow...(class tonight)

The recipe for Apple Chicken Casserole in Gourmet Nutrition is delicious. Made it last night and it uses a few apples. It asked for 2 but I added a third one.

Just eat the apples whole, two a day, if they are really good ones. I like a good apple.

I live in apple country, you get used to 'em after a while. I make pies, crumbles, etc. I also bake them in the oven (easy to do). I've had them steamed before....they're not too bad if you put cinammon on them. They're good with some PB on them or along with cheese. Slice 'em and put them on sandwiches, too.
