I am so enamored with this recipe from TrainingGirl. It actually tastes like cheesecake! My kids ask me for it, it is that tasty. For those, like me, who have their sweettooth, this is it. My preferred way to eat cottage cheese now (OK, I skip the topping, mix with a spoon, and don't let the pudding set and it still tastes good)
Here is what I always make...tastes like blueberry cheesecake..mmmm
1/2 cup low fat cottage cheese
2 tsp sugar free/fat free dry vanilla pudding mix
1 Tbsp skim milk
Mix all of the above in a food processor or blender until smooth. Refrigerate for about 1/2 hour to let the pudding set.
Topping:
1/2 cup fresh blueberries
1 tsp lemon juice
1 to 2 packets of Splenda
Cook this on the stove over medium heat, stirring continuously, for about 8-10 minutes. The juices will come out of the blueberries and the mix will remain a bit chunky. Be careful not to overcook. Let cool and pour over top of your cottage cheese mixture.

sounds really tasty. you could make an actual pie with your recipie as the filling by using johnka's pie crust recipie...just a thought

I've been wanting to do this exact thing! I'm going to make it one day for my family, who by the way seem to be against my healthy eating, and let them try it. They'll be surprised at how good it is [img]smile.gif[/img]

Also, Jello brand now makes a sugar-free, fat-free pudding that is cheescake flavored. It's the absolute favorite dessert in my house.
You may want to try the cheescake flavor instead of the vanilla flavor and see what happens.

Thanks Rip and Red for the suggestions. I was using Chocolate flavored actually. Will look for the cheesecake one now.

I tried the Johnka cheesecake and it sucked. Majorly. I think it was the protein powder.

I did it with the cheescake flavored (like redlefty suggested) and it turned out good, esp with strawberry's.
Dunno about anyone else but I found it best in small quantities. When I ate a good bit at one sitting the flavors really started seperating and everything kinda went south.

The recipe sounded good, but the pudding mix I bought has aspartame and other crap in it. How do folks feel about aspartame?

Gardener, I did realize it had aspartame in it. I do eat/drink products that contain aspartame. If you would prefer not to though, I'm sure regular pudding mix that contains sugar could be used. I was trying to cut the sugar by using the other kind.

Try the Pistachio pudding flavor, it's amazingly good with a scoop of vanilla protein powder!
