In an effort to eat like I'm cheating, starting to experiment around.

8oz cottage cheese
1/4c milk
1tbs lemon juice
dash worshisire sause
red pepper flakes (optional)
salt\pepper to taste

8oz chopped up spinach

Toss everything but the spinach in the blender and let it do it's thing untill smooth. Add in spinach...viola!

wouldn't hurt a bit, the goal is to create "junk food" that is guilt free...if artichokes tickle your fancy then by all means!

I DID forget:
1/4 small onion diced
2 cloves garlic minced

satee (gently cook, untill translucent) and add to the mixture

In the spirit of experimentation, I happened upon a crustless quiche this evening:

Put eggs (your choice on the number) on a slow scramble in a frying pan. Add (less or equal volume) frozen cut spinach. Stir every few minutes until almost set. Add (your choice on amount) favorite cheese to top and turn off heat. Let cheese slightly start to melt, then slide everything onto a plate. Salt and pepper to taste. Voila, crustless quiche for the carb conscious (like me) [img]smile.gif[/img]

FWIW, I did six large eggs, perhaps two cups of spinach, and two one-ounce slices of Provolone. This made enough for two meals for me.

I've made that exact same dish Phae...the only thing I've added to it sometimes is a little bit of hot sauce..yum [img]smile.gif[/img]
