This doesn't really have any significant protein intake, but it seemed like a pretty decent (nutritionally wise) light dessert for the summer.
1 cup splenda
2.5 cups water
1/2 lemon juice
1 egg white
Put the splenda and water in a saucepan. Stir together and slowly bring to a boil, making sure to dissolve the sugar completely. Let it simmer for 10 mins and then remove from heat to cool a bit. Add the lemon juice and strain into a freezeable containment device. Let it freeze until it gets mushy. Then, take it out and beat it up with a fork until the crystals decide to go away. Beat the egg white untill stiff peaks form. Fold in the egg white and freeze until firm. Light and fruity.
