Just wondering if any of you guys or gals had a good high-protein muffin recipe? I have been using one from Johnka, his blueberry bran muffins. They are great the orginal way and I even modifed it a little bit and used bananas and walnuts instead of blueberries and flax. Still, latley I am looking for more recipes to add to my aresenal. Thanks.

Dude, I wish I had seen this earlier. I need some good recipes too! I was in Seattle, and found a vendor that sold the BEST muffin ever. It was 100% Whole Wheat, Nuts, Berries, a little brown sugar (ugh), and some other fruits. It was out of this world, and it was the easiest breakfast. If anyone has a recipe, I'd kill for it.

emartin- Johnka's blueberry bran muffins are very good...I have been making them, but I just wanted another recipie to switch things up. Here is the link to the recipie...

Those look awesome, thanks for sending that my way.

What about adding some dried fruit in there? Put some walnuts like you said, but then maybe some dried cranberries, and maybe a bit of apple?

I am sure that would work...sounds tasty infact. I made a batch that followed the recipie to a tee, then I made a batch where instead of the blueberries I used 2 bananas. Also, I used half the flax that the recipie calls for and instead used crushed walnuts. Came out good too.

Made these yesterday and they came out awsome. They are a varation on Johnka's blueberry bran muffins.

Apple-Walnut Muffins
1 c oat bran
1/4 c flax meal
1/4 cup crushed walnuts
4 scoops whey(I used vanilla and toffee)
1 cup natural apple sauce
1/2 apple diced into very small bits
1 c splenda
few dahses cinamman
tsp baking powder
3/4 c egg beaters
1/4 c water(could use a drop more depenind on how wet they come out)
few tbsps sugar free maple sryup

follow the baking instrcutions for Johnka's blueberry bran muffins.
