Cappy was a real sweetheart and brought me in a batch of Johnka's protein bars. They were soooo good. Thanks Cappy, and thanks John for giving that recipe for her. I ate them with gusto!

Glad you liked them JP! I used them for my road trip snack. I made two batches. Liked the ones I made thinner better, but they were both yummy. Added cinnamon too.
Is this them? I would love the recipe. I need something for the kids' breakfast. They love Balance bars but I don't like the price tag, $1.50 each, or how sweet they are.
Ingredients:
2 cups raw oat bran
2 cups rolled oats
1 cup whole wheat flour
1 cup egg whites
1 cup nonfat milk
2 cups chocolate whey protein powder
½ cup granulated Trans-Plex Sweet-n-Up
5-6 scoops maltodextrin (180 grams)
1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla extract
2 tablespoons oil (canola or olive)
Instructions:
Mix it all together in a big bowl, then spread it out on a large nonstick cooking tray. Add some cooking spray, or wipe a little olive oil on the pan with a paper towel. Bake for 25-30 minutes @ 350 degrees.

Ingredients
2 cups rolled oats
8 scoops vanilla whey
1 cup raisins
1-½ cups unsweetened applesauce
1 tbsp flax oil (olive oil if you don’t have it)
2 tsp cinnamon
1 tsp salt
1 tsp vanilla extract
Splenda, to taste (about 1/2 cup granulated or 10-15 packets)
Instructions
In a clean, dry blender, process one cup of rolled oats into flour (blend on medium for about 1 minute). Stir together the following ingredients in a large bowl: oat flour, the remaining rolled oats (1 cup), raisins, protein powder, Splenda, cinnamon, salt. Stir the applesauce and vanilla extract together with the dry ingredients and mix thoroughly.
Cut 8 squares of aluminum foil, about 6X10 inches each. Lightly coat the interior with a cooking spray. Spoon out an equal portion of the mixture onto each foil square, and roll them into a bar shape. Fold them like tamales, folding the ends over to prevent spillage. You can flatten them into bar shapes if you want, to avoid a tube-shaped bar.
Bake the bars in the foil in a preheated oven at 350-degrees F, for 16-20 minutes. *Be sure not to overcook*

Difficulty Level – Medium

I actually made the granola bar ones from Gourmet Nutrition for JP to sample. Thought about trying applesauce instead of the sugar free syrup.
Think they'd be more like granola and less like bars if I didn't process 1/2 the oats into flour? Or would they be too wet? I like the texture of keeping the oats whole.
I think I'll try these for my beach week road trip food.

You're a whiz in the kitchen - must be nice for JP et al. to get to sample all of your clean eating treats.
I'm pretty sure I've made those granola bars with just whole oats, and they turned out fine. If you give them a try, let me know how they turned out!

That recipe sounds good too - is it one of my older ones? (can't remember - must be early senility). But the recipe I posted above is a real hit with the kids also. I actually had a guy email me his son's presentation in 3rd grade where he taught the other kids how to make a 'healthy snack' (the cinnamon-raisin bars). They loved it [img]smile.gif[/img]

I've got them made and ready for my road trip! Had a taste last night and they're quite yummy.
Went ahead and made it per recipe instead of leaving all the oats whole, cause my teeth are sore from getting my braces adjusted yesterday. Figured softer was better. [img]smile.gif[/img]
Anyway, I used parchment paper to cook them in. Worked really well. Supposed to be a new cooking thing. Non stick. Also took about 16mins. One took a little longer since it was thicker.

Dag...why did mine take so long to cook I think I did everything right...and they taste good. I'll have to see what happens when I cook them next time. I wonder if it has something to do with the non-stick foil being thicker than regular or parchment. Hmmm..not sure if that could be a factor. Ok, I'll stop rambling..lol.
These things are awesome. Lately, I like to mix it all together, and then make cookies out of them. Kinda like PB cookies, roll it into balls and then flatten before baking. A little splenda/cinnamon sprinkled on top....mmmm mmmm. Obviously, they cook quicker this way too. About 10 minutes @ 350 works well for me.
