Here's my favorite midday salad. Low carb

Great for luch or a late dinner all by itself, if you are trying to keep your protein high
Shepherd's salad
You need:
1 large tomato (dice it)
1 medium cucumber (peel and dice)
1 small spring onion (chop)
1 boiled egg (grate it)
2 oz of feta cheese (grate it)
2 oz ham (psosciutto) (dice it)
1 tbsp olive oil
a few leaves of parsley
Mix all the vegetables, sprinkle with the diced ham, top with the cheese and put the egg on the very top. Chop up the parsley and sprinkle on top.
Great color and taste, especially with the olive oil. Adding some apple cider to it also makes a good traditional dressing.
