Before I start, I can't really take credit for this concept... The basis is from Rachel Ray's recipe in a recent Men's Fitness Magazine, "Quarter Pounder with Greens."
Anyhow, her recipe was basically a cheeseburger salad. Looked good to me, although her's had whole wheat bread on the side. If I'm having bread, I might as well have a bun and therefore a burger. The salad can then be on the side...
So, the other day, we had a burger bbq and I made a great tasting salad while the rest of the fam had actual burgers.
6 oz lean ground beef (93% fat free)
1/2 oz low fat cheddar cheese
4 oz/cups mixed greens (spinach, romaine, etc.)
pickle chips
4 oz tomato (cherry or tomatoes cut to bite size)
1 oz red onion (cut to bite size)
1-2 tbsp catsup
2 tsp mustard, preferably from a squirt bottle
While your nutritional "mileage" may vary, this is how mine panned out, below.
Calories: 365
Carbs: 20g
Fiber: 3g
Fat: 11g
Prot: 47g
Make patties of the meat, thick or thin, your choice. Grill or otherwise cook the patties, melt the cheese onto the patties during the last minute or so. Allow the patties to cool for a couple of minutes or they'll fall apart when you cut them. Cut them into bite size pieces.
Toss the greens with the catsup and then put the greens in your bowl. Top with the greens with burger, onion, tomato, and pickles. Squirt your mustard over the whole salad.
However you like your burger (bbq sauce, bacon, avocado, etc.), this has potential.
I liked it so much that I used the leftover patties (1 turkey and 1 lamb even) as my lunch salads over the next two days, mixing all the wet ingredients in one small container and the greens in a sealable "bowl" for mixing just before eating. Not as presentable, but just as tasty.
This is even a decent strategy for attending a bbq, as I'd rather use up some carbs on a beer and leave the bun on the table.
