For those of you wishing to recreate your Retreat '05 experience or to make you feel like you were there, below are the recipes used for the cooked snacks:

hummus
I added a roasted red pepper
heart shaped eggs
It was based off this recipe, but I wasn't too sure how to modify it x12. Used a 5:1 ratio of egg/whites, lean turkey sausage, ff cottage cheese (makes eggs fluffy);lite swiss cheese. It probably could have used more meat for extra flavor, especially since I left out the other spices, expecting the turkey sausage to take over.
Carrot Pineapple Bread
1.5 C whole grain flour (I used Kamut)
1/2 tsp baking soda
1/2 tsp salt
1tsp cinnamon
2 eggs
1/4 C brown sugar
1/4 C splenda (to taste, really)
1/2 C unsweetened apple sauce (oil substitute)
1 tsp vanilla
3/4 C drained finely chopped pineapple
1 C grated carrots
1/2 C chopped nuts (I used walnuts)
mix flour, soda, salt, and cinaamon, set aside.
With a spoon, beat together eggs, applesauce, sugar, and vanilla. Stir in pineapple. Stir in dry ingredients. Fold in carrots and nuts, turn into a oil and floured loaf pan (I used non-stick spray)
bake 50-60mins or until a tooth pick comes out clean. Let stand 5mins on wire rack, then turn out on rack to cool.
On the side for those who wanted to put something on top of it, I whipped neufchatel cream cheese (ff might work too, but this is what I had) a bit of the drained pinapple juice, some splenda, and vanilla)
I doubled this recipe but from the way it disappeared, I probably should have quadrupled it.
I halved the amount of sugar the original recipe called for. Figured the brown sugar would give it flavor. If the recipe had called for regular sugar, I wouldn't have been as tempted to leave it in. If there were 10 slices in each loaf, it worked out to about a little over a tsp sugar in each, which is about 4 carbs. I added the splenda afterwards since I think the kamut flour took a lot of the sweetness away from the fruit. Am trying it again with oat flour.
