Does anyone have any good quinoa recipes they could share? I convinced my wife to buy some this week, but I don't have any recipes

Seems like it could be really good spiced up with some curries.

Thanks!

I usually use it as a side dish and it's good on it's own. However I will cook it with...

- fresh grated ginger
- or peas
- or carrots + ginger
- or chopped walnuts + raisins
- or chili powder or curry

Or once it's cooked put some...
- lime juice over it
- or hot sauce

It's a mild tasting grain with a nutty flavor. Anything that goes with rice will do pretty well with quinoa as well.

quinoa soup

Here's an easy soup recipe

1 (14.5 oz) can vegetable broth
1/2 c quinoa, rinsed and drained
1 3/4 c water
1/4 tsp cayenne pepper
2 cloves garlic, minced
1 c frozen or fresh corn kernels
1 1/2 Tbsp chopped parsley or cilantro
1 Tbsp fresh lime juice

Place broth, quinoa, water, cayenne and garlic in a small soup pot and
bring to a boil. Reduce heat to medium and cook 10 minutes. Add corn
kernels and cook 3 minutes. Add parsley or cilantro and cook for 1 minute.
Remove from heat and stir in the lime juice. Serve hot or cold.

We had quinoa soup when we were in peru...this is a low fat recipe but if that's not a high priority for you, quinoa corn chowder is excellent. Also you can substiture quinoa for tabouleh and risotto in your fav recipes and it works well.
Happy Cooking!

Here's one I make from time to time.

1 cake of firm tofu crumbled (can use chicken breasts instead)
3/4 tbs tamare soya sauce
2 tbs oil
2 medium onions finely chopped
3 cloves of garlic minced
2-3 carrots peeled and grated
rosemary, thyme, sage, basil, salt+pepper
3/4 cup of tahini
4 cups of quinoas cooked – 1 cup dry
3/4 cup ground raw sunflower seeds

To cook quinoas rinse for 3-4 minutes, and then 1 cup to 2 cups of water, bring to boil and then simmer

Toss tofu in bowl and marinate in tamare sauce. Heat oil in skillet on medium, and sautee onions until tranclucent. Add garlic carrots and tofu (including tamare) and tahini and herbs. Cook for 10 minutes until heated. Toss in quinoas and seeds. Continue until heated.
