This uses some spices you may not be comfortable with. So try it out in small quantity to decide if you like it enough.

I got tired of eating the same sauted veggies for a long time and also discovered my calorie intake was not enough from fitday . So I decided to alter it adding lot more chicken to my diet. This is what I tried and I loved it.

Ingredients:
2 pounds chicken - with or without bone
1 tbsp minced ginger
1 tbsp minced garlic
1 big onion thinly sliced
1 tomato
1/2 cup cooked brown rice
1 cup thinly sliced mixed vegetables
a. Carrots
b. capsicum
c. cabbage
d. cauliflower ( you cannot slice it thin hence use flowers of small size)
e. baby corn
f. green beans
(you can use any vegetable of your choice)

1 tbsp olive oil
salt to taste
Water as per your liking.

Spices--
5 cloves
1 bayleaf
2 cardamon
1/2 inch cinnamon

In a large pan, heat the oil. When it is hot enough add all the spices. Then add the ginger and garlic. Brown it well. Add the onion and tomato. Cook for sometime. Add the chicked, stir until chicken changes colour. Add the water and boil well. Add water depending upon how watery you like your soup to be.

After the chicken is cooked add the rice and cook for 5 more minutes. This will ensure that rice blends in with the soup. Add the vegetables and turn off the heat. Cover it and let the vegetables steam in the soup.

Serve it hot.

Optional: You may garnish with chopped cilantro/coriander and 1 tsp lime juice.

Optional: Instead of putting the spices in oil, Boil the spices in 1/2 cup milk. Run the milk through a strainer to remove the spices add this milk to the chicken along with water. This will help take the sharpness away from the spices.
