I don't know the specs on this recipe since I basically meshed a few things together that I saw on "Great Chefs" but I can't imagine that it is "unhealthy."
1-2 lbs boneless skinless chicken tenders (breast cut up into strips)
3 garlic cloves
1 small piece of ginger root
olive oil
basil
Balsamic Vinegar.
In a non-stick frying pan add about 0.5 tbl olive oil and bring to a medium heat. Charge the crushed garlic gloves and minced ginger (make sure you dont include the skin) when the garlic and ginger begin to soften charge the chicken. cook the chicken until it is done. Add about a teaspoon of dried basil and then pour about 1/4-1/2 cup of balsamic vinegar.
I like to break the chicken up into smaller pieces with a fork and then serve over fresh spinach. It's also good to squeeze a fresh orange or tangerine over the salad.
This is a good recipe. I tried it the other day. My wife had a serving over brown rice, I had it over a salad. Tasted very good. Had it in a whole wheat tortilla for lunch the next day. It was still good.
