So I was making muffins last night and I used Jhonka's banana bread recipe as my base....
Basic muffins w/ almonds.
1/2 cup WW flour
1/4 cup strawberry ON whey protein powder
2 tablespoons olive oil
1/4 cup granulated splenda
1 egg -- beaten
1 teaspoon baking powder
1 teaspoons vanilla extract
1/4 cup unsweetened applesauce
1/4 teaspoon salt
0.5 ounce chopped almonds
1/2 cup water
Mix everything, let sit for a few minutes to thicken if necessary. I made 9 small muffins with this. You could probably make 6 regular size ones and if you double the recipe a full dozen bad boys.
Bake aprox 20 minutes at 350 degrees.
Total mix should be around 816 calories.
per muffin assuming six made (values rounded up)
calories: 136
Fat: 8 g (sat=1, poly=1, mono=5)
carbs: 10 g (fibre = 1.6g)
protein: 8 g
Things I will try differently.
-Maybe more almonds
-Try flax meal instead of flour, but I didn't have any
-Different flavors of Whey
-Double the whey
-Different flavoured extracts, Jhonka uses banana extract in his banana bread recipe.
Either way, Thanks for the excellent recipe base Jhonka, the muffins turned out pretty well for my first shot at baking them!
