This should make up for the sodium contect of the last recipe.
Ingredients:
1 pound turkey breast cutlets, about 1/4"
thick
1 tablespoon unbleached flour
1 teaspoon olive oil
1/2 cup diced onions
1 clove garlic, minced
1/2 teaspoon ground black pepper
1/2 dried thyme
1/4 teaspoon dried basil
2 cups low-sodium tomato sauce
Instructions:
Dredge the turkey in the flour to coat lightly on both sides. Coat a large nonstick frying pan with olive oil. Place over medium-high heat. Add the turkey in a single layer and cook for 2 minutes per side, or until lightly browned. Remove from pan and set aside.
Add the oil, onions, garlic, pepper, thyme and basil to the pan. Cook over medium heat, stirring constantly, for 5 minutes, or until the onions are tender. Add the tomato sauce and turkey. Cover and heat for 5 minutes or until turkey is thoroughly cooked.
