The shredded vegetables
in food processor shred
cabbage, green and red, to produce 6 cups, in ratio of 4 cups green to 2 cups red
1 carrot, peeled
1 cucumber, peeled
1/2 green bell pepper, 1/2 red pepper, 1/2 yelloq
1/2 purple onion
The dressing
4 TBSP Mixed vinegars (Mirin, black fig vinegar, riesling vinegar, etc.)
3 TBSP oil (canola, grapeseed, other light oils)
1 TBSP prepared mustard (I use a favorite German import)
ground ginger to taste (go easy)
2 TBSP fresh grated lime peel
1 TBSP fresh grated orange peel
1 TBSP lime juice
2 tsp brown sugar
You can improvise on the dressing
Mix and chill thoroughly.
Before serving, you can add other ingredients as you please. Unsalted peanuts, toasted sesame seeds, pine nuts; chunks of fresh bosc or other solid-fleshed pears, mandarin orange sections; dried currants, cranberries, and so on; chipotle; cilantro if you like it (I hate it).
Will keep well in fridge for 3-4 days. This is very colorful, low-calorie unless you load up on nuts and dried fruits, and low in carbs.
