I make this when I want something chocolate and more packed with protein than the reduced sugar/reduced fat ice creams:

In a food processor, chop up 6-8 ice cubes until very finely pulverized.

Add in - 2 cups of low-fat cottage cheese, 1/2-package of sugar free instant chocolate pudding, 1 scoop of chocolate whey powder, and Splenda according to how sweet you want it and to cut the saltiness in the cottage cheese. Process until very smooth. Easy and very good! Only ~430 calories if you eat the entire thing.

Speaking of saltiness in cottage cheese - has anyone ever seen salt-free cottage cheese offered for sale?? Sure would be nice for desserts.

Great stuff Dave, I tried this last night and really liked it! I was amazed at how salty the cottage cheese was and had to add a lot of splenda.

I was thinking of not adding the whey next time. I really didn't need extra protein and wondered if you have ever tried it that way. Also, I would recommend adding the protein later in the blending process through the feeder tube. I almost killed my blender with the thickness at the start.

Heck now that I'm thinking about it this could be made using any pudding mix...Banana, Butterscotch, Lemon..Yum! thanks for the recipe!

I made this again last night, except I used fat-free ricotta instead of the cottage cheese. I also didn't add the whey powder in this case. Much better with the ricotta! Too bad ricotta is a lot more expensive than cottage cheese.

Fat free ricotta? I'll have to look for that!

I tried it again with the low fat cottage cheese and still had a rough time getting over the saltiness!! Man, I never knew there was so much sodium in cottage cheese. On the other had, the texture is great as is the macro content so I'm going to keep working on this one.

I'll keep you posted.
