Per Adam Campbell's recommendation, I have been avoiding processed carbs in the evenings, so coming up with tasty recipes that give me all the nourishment I need was essential. I haven't done a FitDay treatment on this yet (maybe someone else can if you feel motivated), but I know that this is pretty safe. As always, any recipe I eat has to be quick and easy, being that I have 3 crazy kids demanding attention the whole time.

Needed:
2 pounds Laura's lean organic beef" (4% fat)
2 packets taco seasoning (Kroger brand, reduced sodium.
1 bag organic mix salad
1 package lowfat cream cheese
1 can Campbell's reduced fat cream of mushroom soup (98% fat free)
1 can rotel
2 diced tomatoes (vine ripe preferred)

First, I brown the beef, and add seasoning packets (may need about a half cup of water added).

Second, take the cream cheese out of the foil and nuke it in a mixing bowl. When you take it out, whip it up with a fork, then add can of mushroom soup, mix it in and nuke for another minute. Then add the rotel and mix up, maybe nuke again for 30 seconds (depends on how strong your microwave is).

Now you are ready to serve. Lay down a generous bed of greens (maybe some shredded low fat cheddar cheese if you like), add a couple of large scoops of the taco seasoned beef, then some tomatoes, then pour on the "cheese dip" mix over the top. Trust me guys... It is SO awesome!

High in vitamin rich nutrient rich greens, protien, fiber, spicy flavors, and low in saturated fat and processed carbs. Enjoy!

This looks really good JP. I was wondering if you had any suggestions for someone who wanted to omit the tomatoes.

Also, I've heard that rotel are like little spicy tomatoes...is this correct?

JP, just wanted to say that I made this recipe on Saturday and it rocked! Wife and I have eaten on it twice already (had 3 pounds of beef) and will finish it off tonight.

JP, this is fantastic! My wife made it for the family last night and everyone loved it. The kids used a couple of tortillas to make tacos (a little more user friendly for little kids) and my wife and I ate it in "salad" mode. We all ate our fill and I'm going to have leftovers this afternoon.

I highly recommend this to anyone, whether on Adam's Diet or not.

I found out this morning that the leftover seasoned meat, "cheese dip" mix, along with some diced tomatos and shredded lowfat cheddar cheese make a killer omelet.

TD, Amen to that. I made the recipe 2 nights ago (didn't nuke the cheese long enough, so it was a bit clumpy, but I'll get it next time). Made an omelet this morning, it was awesome. Great recipe JP, and good idea TD!

Becka-I used Lean Ground Turkey instead of ground beef and it was great! I'm sure chicken would be good too...
