Here is a great way to enjoy ground turkey breast (usually bland), as well as getting a big dose of omega-3's and fiber.

Ingredients:

1 lb. ground turkey breast

1/2 cup ground flax seeds

1/4 cup wheat bran

1/2 small yellow onion, chopped fine

4 cloves garlic, chopped

1 omega-3 egg plus 2 regular egg whites, beaten

Salt and pepper

Instructions:

Mix everything together in a large bowl, then separate into 2-inch meatballs and placed on a cookie sheet coated with cooking spray. Bake at 375-degrees F for 30 minutes, or until a toothpick inserted comes out clean.

Makes 3 servings (about 3-4 meatballs each).

Macronutrient Breakdown, per serving:

K/cal: 278
Protein: 32 g

Carbs: 17 g (7 fiber)

Fat: 10 g (1.8s, 2.7m, 4,8p)

Omega-6: 1.2 g

Omega-3: 3 g

Tried the recipe Johnka, and it came out pretty good. I added a small amount of parmesan cheese to it, once it was done baking.

I can see myself making it again sometime in the near future. Great recipe, and keep them coming.

Johnka, do you take requests?

How about a biscotti recipe? You've said that baked goods using protein powder tend to turn into rocks if overcooked. That's sounds the road to biscotti to me...
