Here is a great way to enjoy ground turkey breast (usually bland), as well as getting a big dose of omega-3's and fiber.
Ingredients:
1 lb. ground turkey breast
1/2 cup ground flax seeds
1/4 cup wheat bran
1/2 small yellow onion, chopped fine
4 cloves garlic, chopped
1 omega-3 egg plus 2 regular egg whites, beaten
Salt and pepper
Instructions:
Mix everything together in a large bowl, then separate into 2-inch meatballs and placed on a cookie sheet coated with cooking spray. Bake at 375-degrees F for 30 minutes, or until a toothpick inserted comes out clean.
Makes 3 servings (about 3-4 meatballs each).
