I am an admitted spicy food addict, I love hot sauce, and chili's of all sorts. Anyway, I came up with a nice marinade for BBQ'ing or broiling meat that uses fresh chilis as a base...oh, it can also be used as a dip as well...(no exact measurments here, i always eye it, sorry)
-A handfull of chili's (jalapeno, habanero, poblano, whichever, just make sure theyre fresh) chopped, do not discard seeds
-About a cup of parsley
-About half cup of cilantro
-Several cloves of garlic
-about half an onion, chopped
-tbsp red wine vinegar
-about a half cup of extra virgin olive oil
-pinch of salt, black pepper, paprika, cumin...
-shot of tequila (OPTIONAL)
Blend it all up in a food processor or blender, then brush it on the meat before grilling, reapplying after each time you flip the meat.
