I just made an almond/cashew butter (also threw in some flax seeds) with my food processor. I did add a little peanut oil to help smooth out the consistency. Next time I might add flax oil instead just to be extra good. The end result was really good - the consistency is not quite as smooth as natural peanut butter, but I like it just fine. The only mistake I made was adding too much salt. I think almond and/or cashew butters might be better unsalted. I think I saved 60-70% in cost over what I would have paid for almond butter or cashew butter in the store by making my own.
