Can someone please send me some details about a healthy way to make chicken breast? I DO NOT cook thus far.... Just learning...

I get the big pack, cut them into cubes or strips and cook them in a pan with a little olive oil or Pam. Then, I divide it up for the week. I do the same thing with whole wheat pasta and brown rice, and mix and match for lunches. For example:

M--Brown rice, chicken, almonds and curry powder
T--WW Pasta, Chicken and tomato sauce
W--Brown rice, chicken, broccoli and soy sauce
R--Chicken, WW Pasta, Margerine or IBINButter, salt and basil
F--Chicken, black beans, brown rice, canned tomatoes, and chili powder...mmmmm, chili.

I second the George Foreman grill. I keep chicken tenderloin in the freezer and many times in the morning(not great at prior planning) I need protein for my meals and the GF grill comes in handy...couple minutes of cooking and I can add the chicken to whatever I'm eating that day.

Fishrcutb8--yummy chicken ideas. I do the black beans too. Haven't thought of using chili powder, I usually use salsa and sometimes use low fat cheese instead of chicken when I'm tired of meat (or need a quicker fix)

I buy boneless, skinless chicken breasts. I am not a big fan of chicken if it turns out dry, so I usually put it in a skillet with maybe a half to one cup of water and pour teriyaki sauce over the breasts. Cook them on about medium/medium low and they are done in no time. The teriyaki gives them a great flavor and they are turn out juicy. Great on salads, plain, or forget the teriyaki and use them to add to other dishes.

Marinade the chicken overnight, some good quick marinades are...

1)
crushed garlic
frank'red hot
olive oil
cracked bl. pepper
<---then broil in marinade
2)
parsley
lemon
olive oil
garlic
capers
bl pepper
<---then cook in white wine and veg/chicken stock
3)
crushed tomatoes
onions
garlic
olive oil
bl pepper
tabasco/habanero sauce
<---sautee
4)
jalapenos/sarrano/habanero peppers
cilantro
parsley
olive oil
garlic
black olives
onions
<---cuisinart the above ingredients, cover the chicken with the paste and grill/broil

OK, Here is my latest chicken recipe.

You take a bowl and add some oats to it with some WW flour (might be able to get away without the flour) Add spices to the Oats and flour, like oregano, pepper, cilantro might be good, maybe some dried chilli's for some heat.

Next add some egg whites to a different bowl.

Dunk chicken breasts in eggwhites and then coat with mixture. Once coated I BBQ those bad boys!

mmm mmm tasty.

I marinate the hell out of mine and throw some various spices on it. I really kind of experiment since most of the stuff I use you can't go wrong with. My recent favorite is to take a breast, douse it in garlic powder (I love me some garlic), add some chili powder, then rub it with spicy mustard and then marinate the whole thing in Frank's Red Hot sauce. It makes for a spicy chicken breast with a little extra kick and flavor from the mustard. After I marinate it, I throw it on a cookie sheet and bake at 325 degrees for about 24 minutes. Depending on the size of the breast, you'll want to cook it slightly more or slightly less, but 23-25 minutes is generally a good rule of thumb. I experiment with different marinade/spice combinations. There should be a whole section of marinades at the grocery store right by the salad dressings.
