Souvlaki
2 pounds sirloin steak, pork tenderloin, or chicken cut into 1 inch cubes
12 bay leaves
4 cups Greek Marinade (see below)
3 green peppers cut in 1 inch pieces
12 mushrooms
3 medium onions cut into wedges
12 cherry tomatoes
Get some skewers and I am sure you can figure what to do next. Alternate meat, green pepper, mushroom, and onion until skewer is filled. Put them in an accomodating baking dish, pour the marinade over them and let sit overnight. The next day, line grill with heavy duty foil and grill the kabobs, turn and marinade while grilling. That's it.
Greek Marinade
3 cups dry white wine
1 cup olive oil
2 tablespoons oregano
1 teaspoon salt
1 tablespoon garlic powder
1 tablespoon black pepper
Combine marinade ingredients in a small glass bowl. Cover bowl with plastic wrap, stretching to seal tightly.
Refrigerate overnight. Stir well before using.
