GYROS


1 pound lean ground beef
1 pound ground lamb
oregano
garlic
salt
pepper


Go as heavy or as light as you wish on the seasonings....I prefer heavy to get that authentic taste.

Mix well, flatten on cutting board to about 1 inch thickness. Grill, then slice on a bias and serve on warm flatbread with TSATSIKI.

TSATSIKI

Ingredients:
4-5 cloves garlic crushed to death (juices saved with the garlic)
1/2 lb plain flavour yogurt
1/2 tblsp olive oil salt and pepper
1/4 cucumber, peeled , grated, and drained

Instructions:
Mix first four ingredients. Store in fridge until ready to serve (at
least 1/2 hour). Mix in cucumber right before serving.

There's the version of Tsatsiki that we make here:
1 lb drained plain full fat yogurt (drain in cloth overnight)
1 tblsp olive oil and a pinch of salt
4-5 cloves of garlic
2 tblsp chopped dill weed
2 tblsp ground walnuts
1 chopped cucumber/or chopped pickles if you like the taste/you can do it with chopped raw zuccini but add lemon if you do

I just made this tonight for a presentation I did for one of my classes. It's great stuff.

1-4cup container of full fat yogurt
line a strianer with paper coffee filter and let drain over night (as above). You can also do this with low fat and fat free yogurt.
2 medium cucumber shredded. Put in a strainer and mix with some salt and set over night to get all of the liquid out of the cucumbers. Putting some weight over it helps.
4 cloves of garlic minced
4 tbs extra virgin olive oil
a dash of vinigar

Mix all together, season with salt to taste. Serve with veggies and whole wheat pita bread and you got yourself a healthy snack.

My wife loves gyros! I will have to try this one out if I can find lamb...
Iowa is the land of beef and pork, I guess we have some corn too!

If you need to be somewhere, this is not the meal to have just before you go

I like lemon/lime or some sort of chilli instead of the tsatsiki.... if I'm not expecting to spend the night alone
