As my title indicates, this is an EASY, yet also healthy recipe. Chefs may turn their noses up at this, but they don't have to cook for 6 people every night while maintaining peace in a madhouse!
First, dice an onion or half an onion (approx a cup), and about 2 stalks of celery. Drop them into a pot and put just a dash of oil. I used Grapeseed oil, which is very good for you. Then cube a large portabella mushroom and drop it in with the sauteeing veggies, and stir around and sautee for another 10 minutes till they are all soft.
This is the easy part. Drop in a large can (family size) of Campbells "healthy request" 98% fat free cream of mushroom soup, and an equal amount of water. Stir, and while you are waiting for it to boil, wash about 2 cups of lentils. Once your mixture is boiling, drop in both cups of lentils and approx 3-4 cups of water (may need more). Bring to boil and turn heat down low... let simmer for an hour and you are ready to roll.
Wasn't that easy?
