What spices are used to typically flavor lentils in Indian cuisine? I'm looking for recipes really.

Lentil Loaf

Makes: 8 slices

Ingredients:
· 3 cups cooked lentils
· 1-1/2 cups oatmeal
· 3/4 cup onion, chopped
· 4 garlic cloves, minced
· 3 cups tomato sauce
· 2-1/4 teaspoons Italian seasoning
Directions:
· Combine all ingredients in a bowl.
· Mix thoroughly and press mixture into a loaf pan coated with nonstick cooking spray (nonfat).
· Bake at 350 degrees F for 50 minutes.
Nutritional Information:
· Serving Size: 1 cup
· Calories: 240
· Fat: 1 g
· Cholesterol: 0 mg
· Protein: 15 g
· Carbohydrates: 35 g
· Fiber: 10 g
· Sodium: 35 mg

OK, here it is Mike. Sorry for the delay.

Dahl (Indian Lentils) Recipe

Serves 4 people.

Ingredients:
-1/2 cup chana dahl (medium sized yellow lentils)
-1/2 cup of masoor dahl (small orange lentils)
-1/2 tsp red pepper
-1/2 tsp salt
-1/4 tsp haldi (ground mustard seeds)
-1/4 tsp zeerah seeds (available at any Indian grocer)
-1/4 tsp freshly ground ginger
-3 tbsp corn oil
-2 cloves garlic, chopped
-1/2 small yellow onion, chopped

Directions:
Wash the lentils thoroughly in water. In a pot, add all of the ingredients into 4 cups of water except the corn oil, the garlic, and the onion. Cook on low to medium heat for 20 minutes and remove from stove when water is minimal and lentils are mushy.

In a small pot, heat corn oil until very hot and sautee the chopped onion until brown. Add the chopped garlic, and brown it as well. The oil should be sufficiently hot that this occurs relatively quickly. Place this onion, garlic, and remaining oil mixture on top of the cooked lentils in a serving dish. Garnish top with cilantro and freshly chopped spicy green pepper.

Serve with warm pita bread or homemade flat 'pratha'. Meat kabobs are also good with dahl and bread.

Here's a version from our friend, Dr. Weil (well, everyone but Russ' friend [img]smile.gif[/img] ):

Pink Lentil Curry

Lentils are a wonderful source of protein, calcium and iron. They are a staple ingredient in Indian cooking, and combine well with many different seasonings. You may be most familiar with brown or green lentils, but did you know lentils can also be black, yellow and pink? Look for these more exotic varieties in Indian and specialty food stores. Similarly, not all curry powders are the same, ranging from quite mild to very hot. In making this dish, start with a small amount and taste it to be sure your dish meets the comfort and taste level of your guests. This dish is filled with exotic flavor and can be served as an entrée with rice or as a side dish alone.

1 pound pink lentils
1 tablespoon expeller-pressed canola oil
1/2 cup carrots, chopped
1/2 cup celery, chopped
1 cup onion, chopped
2 cup cabbage, chopped
Curry powder to taste
4 cloves garlic, mashed
1 tablespoon chopped gingerroot
1 tablespoon soy sauce, or to taste
4 cups hot cooked rice

1. Pick over lentils, removing any stones or foreign matter. Place in a bowl or colander and rinse thoroughly. Place lentils in pot with enough cold water to cover well. Bring to a boil, lower heat, and cook, partially covered, until lentils become a thick mush (about one hour).

2. Meanwhile, heat canola oil in skillet, add vegetables and a little water, stir and cover. Cook, stirring occasionally, until vegetables are barely tender.

3. Add curry powder, garlic and ginger. Stir, then replace cover and simmer until vegetables are tender.

4. Add vegetables and soy sauce to lentil mixture. Toss together, correct seasonings, and simmer for 10 minutes to blend flavors.

5. Serve with rice.
