High Protein” Fried” Rice (Serves4)
Ingredients:
1½ c. cooked brown rice, cooled
6egg whites, beaten
8oz cooked chicken breast (or shrimp)
¼c green onion (or yellow onion, if preferred)
2cloves garlic, peeled and finely diced
2tbsp. low sodium chicken broth
Dash reduced- sodium soy
Salt & fresh ground pepper to taste
Directions: Cook egg whites in non-stick skillet ad set aside. Spray pan with non-stick cooking spray and sauté onion, garlic and a dash of soy until garlic is lightly browned. Add rice and chicken and cook until warm. Add broth and egg whites and cook until hot. Season to taste with ground pepper and a little salt.
