Instead of the confectioners' sugar, I've been known to "cut" it with Sweet-N-Low, or just use less. Either way-this is a fat free recipe and has helped me get through the hot Arkansas Summer. I just finished perfecting it, and I thought I'd share it with you guys. It's really easy, and perfect served in nice goblets with fat free yogurt and/or Fresh Fruit for entertaining. Guests love it.
WATERMELON SORBET PLATE
1/2 med. size watermelon
1/3 c. confectioners' sugar
1 tbsp. lemon juice
Fresh fruit in season, such as melons, berries, or kiwi
Scoop pulp from watermelon; remove all seeds. Cut watermelon into 1-inch cubes. Measure 6 cups of watermelon for sorbet; refrigerate excess watermelon. In food processor fitted with metal chopping blade or in blender (in 2 batches if needed), puree watermelon thoroughly, about 1 minute. Add sugar and lemon juice for mixture; puree 1 additional minute.
Pour into a 9 x 9 inch pan; cover with aluminum foil or plastic wrap. Place in freezer until mixture is frozen around edges and slushy in center, about 2 hours. Into a large, chilled bowl, spoon mixture; with an electric mixer or whisk, beat until uniformly smooth and fluffy. Return mixture to pan, cover and freeze until firm, about 2 hours.
To serve, remove from freezer and place in refrigerator about 10 minutes for easier scooping. Arrange on plates with fresh fruit. Makes 12 servings.

That recipe sounds awesome Sarah... If you have some made up bring it to the gym tomorrow (pleeeaassse  )
Ryan, those seedless watermelons have a funky taste to them... they "jest ain't raaaght!" Get yourself some Arkansas grown melon and pick out the seeds... it is well worth it.
We all biking together next weekend?

The last seedless I had was pretty good. Not the best I've had, but still good. I guess you'll have to treat me to some Arkansas grown melon.  [img]tongue.gif[/img]
Hmmmmm, don't know about next weekend. I guess you'll have to ride without me.  My 4 year-old nephew is staying with us this week/weekend and I don't get to see him much, so I like to spend time with him when I can. But, the weekend after that looks perfect for me.
How's the weekend of the 15th and 16th for you two?

I just found out that the rugrat is leaving friday. So, I'm good for this weekend.
JP, I'll just have to leave after work, which will put me up there around 8:30-9:00pm fri. You're not gonna make me sleep in the dog house again are ya?

Would any suger do or does it have to be confectioners' sugar? But, it sure sounds delicious. I love sorbet too so I am going to give it a try.
