Banana bread
This one is friggin' delicious...

1/2 cup flax meal (1/4 cup ground flax seeds)
1/4 cup chocolate whey protein powder
2 tablespoons olive oil
1/4 cup granulated splenda
1 egg -- beaten
1 teaspoon baking powder
1 1/2 teaspoons banana extract
1/4 teaspoon salt
1 ounce chopped walnuts
1/2 cup water

Mix everything, let sit for a few minutes to thicken if necessary. Spoon into a 8X4" bread baking-glass-type-thing (don't know the name of it), after spraying it with Pam.

Bake 25-30 minutes at 350 degrees.


per half-loaf:
calories: 408
Fat: 33 g (sat=5, poly=12, mono=14)
carbs: 11 g
protein: 20 g

John, does the splenda cook well? I have been tempted to try it on a lot of my recipes.

Yup, Splenda cooks great...no metallic aftertaste like artifical sweeteners. Does have a few (minor)carbs though; something like 24 carbs per cup (see my post from yesterday on MH forum for exact amount).
